Hi, I am Ola!

I am not a doctor. But I live in my body each day and know when I feel good and when I do not. What I eat, makes a great impact on how I feel and the quality of my life. As such, I like to choose foods that not only deliver nutrients to my body, but also taste delicious and satisfy my cravings.

My weakness is challah, bagels, pizza, and apple crisp. But for years I have been told that if I want to stay fit, I need to avoid these indulgences. And whenever I did indulge in these “forbidden” foods, I did feel like a brick was sitting in my gut for hours afterwards. So I put a caution tape around this yummy, flour-based food group.

That is until I discovered the difference between European and U.S. flour. I noticed that whenever I indulged in pizza in Italy or challah in Poland, that feeling of heaviness was not there. However, when I ate these very same foods in the U.S., I felt bloated and discomfort afterwards.

This pushed me to use only European flour in my baking, and specifically the Polish flour. It is rich in nutrients and minerals and I don’t feel discomfort after having a slice of bread made out of the Polish flour.

To further improve the quality of my baked goods, I choose ingredients that deliver nutritional value and add benefits to my breads and pastries, like protein, fiber, and iron. I try to avoid Genetically Modified (GMO) ingredients whenever possible. I also use reduced amounts of sugar. Why add the extra calories when a smaller quantity of sugar is enough to nicely balance the taste? I do all my baking from scratch, with ingredients you can pronounce.

I love desserts, and I eat dessert every day. But when I choose my dessert, I want to be sure that it adds benefits to my diet too, not just empty calories.

Having seen limited options that meet my requirements, I have decided to dig up my grandmother’s old recipes and bake my own breads and pastries. The way I saw them made in my childhood. And today I look forward to sharing my baking with those who have the same appreciation for high-quality, nutritious, simple, and delicious-tasting foods.
